Peanut Butter Energy Bites Recipe

This is one of our most popular products, and we want to share this great recipe with you. These are great grab- and- go breakfast and snack. We love grabbing these for soccer games and trips to Disney. They are easy to make and are budget-friendly.

Peanut Butter Energy Bites

(This recipe is made without any gluten products)

Recipe Yield: 57 bites

Prep Time: 15-30 minutes

Max Hold Time: 7 days

Ingredients:

  • 3 Cups of rolled oats
  • 2 Cups of sweetened, shredded coconut
  • 16 Oz jar of peanut butter
  • 1 Cup oat flour
  • 1 1/2 Cups of chocolate chips
  • 3/4 Cups of honey
  • 3 TBSP chia seeds
  • 1 TBSP of vanilla extract

Directions:

  1. Combine all ingredients in a mixer or large bowl and mix well. If using a mixer, be sure not to mix too long or chocolate chips will melt.
  2. Chill dough in fridge for 30 minutes to firm.
  3. Roll into 1/2 dollar sized balls.

My kids love these for snacks. I have a very active middle schooler. She is in competitive soccer and currently running cross country. With all that exercise, she has a pretty healthy appetite. These are great for her to snack on before or after her sports practices. I promise you will not be able to stop yourself with just one. They are really good.
