Carrot Cake Energy Bites
(Recipe is made without gluten ingredients, vegan, dairy-free)
Recipe Yield: 20 bars
Prep Time: 10 minutes
Max Hold Time: 7 days (refrigerated)
8 carrot sticks
½ sweetened, shredded coconut
¼ cup dried regular raisins
1 cup toasted walnuts
2 TBSP flax seeds
2 cups rolled oats
½ tsp ground cinnamon
1 tsp vanilla extract
¼ cup agave
*Toast walnuts in oven at 300 degrees on an oven tray for 5 minutes
Place carrots and all dry ingredients in a food processor. Pulse a few time.
Combine vanilla extract and agave in a separate measuring cup. Add to dry mixture.
Process until combined. (Do not puree. You want the texture of nuts and such. Once it starts sticking together, the mix is done.)
Portion with a purple scoop or ice cream scoop, pressing firmly into the scoop. Make sure to level it off.
Store in a lidded, labeled container in the fridge between sheets of bakery tissue.
